A recipe that’s perfect for breakfast, as a snack, also for the lunchbox and is also well balanced with lots of protein, some healthy complex carbs
This is not a regular appe recipe, I used my left-over dosa batter for making these appe, and they turned out really well so hence sharing my little cooking experience.
Ingredients:
- 1/4 cup Steel cut oats (not rolled or instant)
- 1/4 cup moong dal
- 1/4 cup urad dal
- 1/4 cup masoor dal
- 1 tsp fenugreek seeds
- 1/4 cup rice flour
- 1/4 cup Rava (optional)
- 1 cup spinach leaves
- water to taste
- Salt to taste
- 1 tsp baking soda / Eno
- For Tadka – oil, mustard seeds, cumin seeds, urad dal, hing
and curry leaves
Method:
- In a medium pot, mix steel cut oats, moong dal, urad dal, masoor dal, and fenugreek seeds. Rinse these with cold water 2-3 times and then soak these in water overnight.
- On next morning, drain the water from the dal mixture. Transfer these to a blender and first add rice flour. Mix everything together. Then add spinach leaves and some water to blend everything together.
- Blend this mixture to make a smooth batter. For making
appe , the batter needs to be thicker than dosa batter. - Transfer this batter to a bowl. If you need, you can add Rava to make it thicker. Add salt as per your taste and mix well.
- Prepare
tadka in a small frying pan and add this to the batter. - Now just before making
appe , add 1 tsp of Eno fruit salt or baking soda with 1 spoon of water and mix everything. - Prepare
