Sharing a pancake recipe as a first post of 2021 seems counter intuitive when many of us are trying to eat healthier, right? But let me tell you a secret. When we truly enjoy what we eat without any guilt, it creates a different metabolic response in our body as compared to forceful eating. There is lot of research that has proven how our mind plays a role in digestion and metabolism.
So if you find yourself having a pancake, it’s perfectly okay.
🌿 Give yourself permission to enjoy it guilt-free but do it in moderation

Before I share the recipe, here is a disclaimer - you can make these healthier by all means, but this simple straightforward recipe is guaranteed to bring a smile! It’s a very basic recipe that you can use with any toppings of your choice. We love Nutella with maple syrup or homemade blueberry compote with salted butter. Sometimes, it’s best to keep classics as they are, isn’t it?

☘️here’s the recipe that will make ~10 small pancakes
1/2 cup whole wheat flour
1 tbsp sugar
1 tsp baking powder
1/4 tsp salt
1/2 cup milk
1 egg
1 tbsp unsalted butter, melted
1 tbsp vegetable oil (I use regular peanut oil)
handful of chocolate chip (optional)
Toppings - fruits such as banana, strawberry, jam, maple syrup, chocolate syrup, honey ..

☘️method:
In a medium bowl, whisk together one egg, oil and butter, add sugar and then add milk. Whisk everything. Then add dry other ingredients. Mix until everything is combined, no need to use electric mixer.
Just as you would do a dosa, apply some oil first on a hot tawa. Drop a big spoonful of mixture, drizzle some oil on sides. Once you see bubbles forming, flip them over. You can keep them warm in a pre-heated oven, if you are making a big batch.
Enjoy them hot with your favorite toppings!

🌿1 Start your day with warm water and lemon/cinnamon/ajwain
.
🌿2 No cold water, instead sip on warm herbal tea throughout the day - like green tea / ginger tea / fennel tea / CCF tea
.
🌿3 Replace carbs with little more protein during lunch (yogurt, dal, legumes all count)
.
🌿4 Avoid snacking between meals, if you add more protein and fibre, you shouldn’t feel hungry between meals.
.
🌿5 No processed foods, instead eat fruits and/or nuts as snacks in between meals.
.
🌿6 Early dinner with light, easy to digest, comfort foods such as dal-rice or khichadi or soups.
.
🌿7 And at least 20 minutes of workout with a good 8 hours of sleep

Follow this for a week to bounce back with same energy and eliminate excess bloating!

As you saw on our stories, we had a nice time playing with this dough and making various ornaments. Swaru also made a big handprint ornament that we will paint this weekend.

✨ Here’s a quick recipe
2 cups all purpose flour
1/2 cup salt
3/4 cups warm water
1 TBSP Corn starch if you want to bake these, else you can leave this

That’s it! Just knead the dough as a regular dough, you might want to add a little bit oil to make it easy to knead.
Give them some cookie cutters and have fun!

If you want to bake these, leave them to air dry for a day and then bake for 60 minutes at 200F.
.
