Flourless Butter-less Crispy Chewy Nutty Goodness
No Flour and No Butter – these cookies are made with just 4 ingredients – Almonds, eggs, sugar and vanilla extract. Gut-friendly and yummy at the same time!
These are meringue cookies and because they don’t contain any flour, they don’t hold pretty shape. But they taste really nice, light and chewy in the center and crispy on the edges.
It takes only 20 minutes from start to finish to whip these delicious cookies. I use almonds but you can also use other nuts such as cashews, walnuts and also hazelnuts. In fact, the hazelnut cookies are popular in Italy and are known as “Brutti ma Buoni” – Ugly but Good Hazelnut Cookies!
Ingredients :
- 1 cup Raw Almonds
- 1/2 cup sugar
- Egg whites from 2 large eggs
- 1/2 tsp Vanila Extract
- a pinch of salt
Method:
- Separate the egg whites – I use the shells to hold the yolk while I collect the egg whites in a bowl. You can also use an egg white separator.
- In a food processor or a mixer, grind almonds and sugar together.
- In a pan, whisk egg whites with a pinch of salt. Whisk until firm peaks are formed.
- Now fold in almond-sugar mix and vanilla extract.
- Mix everything gently. Do not over mix this.
- Preheat the oven to 350 degrees F.
- Use a non-stick baking tray. Spoon the cookies leaving some distance.
- Bake these for 6-7 minutes until edges are golden brown.
- Let them cool completely before you take them off the tray.
